beignets,little pillows of cheese

these are yummy,one isn't enough!!

all you kneed is
50g butter
150mls water
75g plain flour
2eggs
100g strong cheese your favorite
oil for deep frying

 1. heat oil .
2.  melt butter in the water,add the flour and mix together add the eggs stir till incorporated then add the
cheese .
using a teaspoon ,spoon small teaspoons of mixture into oil ,keep turning till golden take out with slotted spoon .serve warm ,i like to serve a little chilli sauce with them, great for a canape with drinks

how about trying to make your own,its easy you only need a few ingredients and time .
this is the last of my stash from last year .
this recipe is from Italy alas not my own.

ingredients.

10 lemons (i used bergamont  i like the taste)
1 bottle of vodka use one you want to drink
31/2 cups water
21/2 cups sugar

using a peeler remove the rind from the lemons , keep the lemons for lemon curd or what ever you like .steep the lemon rind in the vodka in a large jar at room temp with a cover on top for 4 days ..
make sugar syrup with water and sugar and cool,pour over the lemon mix and leave overnight at room temp,next day strain through mesh strainer,transfer into bottles and hide in your wardrobe ,you need to be strong and leave for month ,then put in the freezer and have a party.

indian bean and orange stew



2tbsp ginger chopped
3 cloves of garlic chopped
veg oil for frying
1tbsp fennugreek seeds
2tbsp cumin seeds
1tbsp rosemary chopped
2-3 bay leaves
1tsp oregano
1tbsp  turmeric
1tbsp garmasala
1tbsp tamarind pulp
11/2 cup chopped tomato
1 cup sweet potato chopped
1 cup water
1 tin of mixed beans / chick peas
zest of 1 large orange and juice

toast spices and grind , gently cook onions and garlic add spices and cook for a few minutes add vegetables ,beans and water.cook till tender finish with orange juice and zest . serve with warm bread

japanese tofu noodles

3tbsp soy sauce
2tbsp rice vinegar
1tbsp mirn
8oz tofu cut into cubes
coat tofu in marinade leave for 1hr
remove and coat in cornflour and fry gently set aside keep marinade.

bunch of asparagus sliced at angle
1oz soya beans
1oz peas
small knob of ginger chopped
8oz soba noodles cooked
chilli oil

heat oil add vegetables stir fry add noodles and rest of marinade and toss together,serve and top with tofu and coriander

cubin chicken and homemade naan bread and mango

easy recipes for all,get the kids involved



1tsp cumin ground
3 cloves garlic
1 red chilli
pinch of pepper
juice of 4 limes zest of 1
1tsp honey
1tsp honey
1tsp soy sauce i use dark soy more flavor
2tsp butter
3/4 + 1/4 cup orange juice
1kg chicken diced

to a blender ,add cumin,garlic,chilli,pepper and 2/3 cup orange juice ,lime juice  and zest ,honey ,soy sauce and a handful of fresh coriander blend till smooth .next add chopped chicken to a freezer bag and pour sauce on top leave to marinade for 20 mins or even over night
drizzle oil in pan  take chicken out of sauce and cook the  chicken till browned remove and cover .add marinade to pan , bring to boil add the butter and reduce add more chopped coriander and chicken .

mango salsa
1 mango chopped
1 chilli chopped
1/2 lime juice
1/4 cup coriander chopped
mix together all set aside

naan bread
4 cups plain flour
1/4 tsp salt
1tsp baking powder
11/2 tsp baking soda
1/4 cup hot water
1tsp sugar
3/4 tsp yeast
3/4 cup warm milk
1 cup greek yogurt

mix together water ,sugar,yeast leave to froth up in warm place
in a bowl mix flour,salt,baking powder,baking soda add yeast mix together should be sticky, leave to rise 1hr or over night if need .divide into 8 and form small balls, roll into oval shapes 1/4in thick
heat a frying pan and butter both sides with butter ,place in pan and cover with lid bake till you see bubbles 1 min turn ,cook further 2 mins until toasted bubbles appear .sprinkle with sea salt and melted butter,fold in half while hot fill with chicken and top with mango salsa . enjoy with a cold beer

my green thai curry paste
i like medium hot but you an go as  hot as you like.
serve with Jasmine rice or my favorite  pilaf   ,this is a quick dinner if you don't have a lot of time ,can be made day before for added flavor


4 chillis
4-5 garlic
1 shallot
1 thumb of galangal or if you cant get fresh 1 tbsp paste
1/2 tsp of ground coriander
1/2 tsp of cumin
1/2 tsp of pepper
1/2 cup coriander
1/2 cup basil
3 tbsp fish sauce
1 tsp shrimp paste
1 tbsp lime juice
1 tbsp brown sugar
1/4 cup coconut  milk

no need for chopping, if you have a blender great put all ingredients into blender and slowly blend till all is mixed together. in a shallow frying pan fry pieces of chicken and add your paste cook for a few minutes until spices are cooked . enjoy .
